Ok, so there are plenty of other foods out there besides fast-food junk, right? We can actually cook our own healthy meals and be yummy in our tummy! So here we can share on our favorite recipe of the month!

PostSubject: Spinach Pasta Salad   Our favorite healthy recipe! EmptyWed May 25, 2011 5:22 pm

You'll need:
8 ounces of fresh spinach 2 medium zucchini, chopped
4 plum tomatoes, chopped salt and pepper to taste
5 tablespoons of olive oil, divided 6 ounces reduced-fat feta cheese
12 ounces of penne pasta 1/2 cup of pecans, chopped

What to do:
1. Cut the spinach leaves into strips
2. Combine spinach with the chopped tomatoes in a bowl. Toss gently with 4 tablespoons of olive oil.
3. Cook pasta according to directions.
4. Remove pot from heat and stir in chopped zucchini. Allow zucchini to stand for 30 seconds in pasta and water, then drain.
5. Add pasta and zucchini to spinach mixture ans toss gently.
6. Drizzle last tablespoon of olive oil over the mixture and season with salt and pepper.
7. Add feta-cheese and pecans; toss to mix. Serve at room temperature.
(You may need an adult's help with this recipe)

This is good for you heart, has 348 mg of sodium (compare to Big Mac's 1040 mg), and only 158 calories! Try to compare to anything from the frozen food aisle or Burger King!

INGREDIENTS

1/4 cup dry seasoned bread crumbs
4 cod, haddock or flounder fillets, thawed if frozen (4 fillets = 1 lb)
1/4 teaspoon salt
1/8 teaspoon ground black pepper
PAM® Grilling Spray
1 tablespoon fresh lemon juice

DIRECTIONS

Place bread crumbs in shallow dish; set aside.
Rinse fish; pat dry with paper towels. Sprinkle evenly with salt and pepper. Add to bread crumbs; turn over to completely coat both sides of each fillet.
Spray large skillet with grilling spray; heat 1 minute over medium-high heat. Add fish; cook 10 minutes or until fish flakes easily with fork (145°F), turning after 5 minutes. Remove from pan. Drizzle with lemon juice.

PostSubject: Craisin-Almond Spread   Our favorite healthy recipe! EmptySun Oct 09, 2011 4:39 pm

This is a recipe I came up with, and it tastes sooooo good! Very Happy Kids, make sure a trusted adult helps you.

Serves: 2
Prep time: 20 minutes
What you will need:
-mortar and pestle
-cutting board
-knife (use with caution!)
-microwave
-microwave safe cup/bowl that is large enough to stir condiments within
-3/4 cup of craisins
-1/2 cup of almonds
-3 tsp of brown sugar
-a dash of ground cinnamon
-2 mini Dark Chocolate Hershey's Kisses (or something similar, but this is what I used)
-1 1/2 tbsp of Smucker's seedless strawberry jam (or something similar, but this is what I used)
-2 1/2 tbsp of milk
Directions:
1. Cut all of the craisins into very, very, VERY small pieces. This may take awhile...... Also, be careful with the knife you will need to them with. I recommend a sharp knife, adult supervision kids(!), and to please be careful!
2. With the mortar and pestle, crush all of the almonds. Don't make it too fine, but crush them enough! You may also wish to shred them, but this is not recommended.
3. Mix the cut craisins and crushed almonds in the cup/bowl.
4. With the mortar and pestle, crush both of the chocolate kisses.
5. Add all of the brown sugar, the dash of cinnamon, and the crushed chocolate to the mix. Stir.
6. Add all of the jam and milk to the mix. Stir.
7. Put the mix in the microwave on high for 30 seconds. Any microwave will do. Remove and stir.

And now you are all done! To enjoy, toast a couple of English muffins and spread this jam onto them. Bon appetite!
